Asian-Style Ribs
If you love Chinese food as I do, and you love Ribs too, you're going to love this recipe.
This is the perfect recipe for a lazy Saturday or Sunday Meal. Be sure to make enough for leftover lunches during the week. This freezes well if you save some of the sauce in the same container. Either way, it will be worth the wait for dinner.
Ingredients:
5-7 lbs of either Beef or Pork Ribs cut into short pieces
1 cup Soy Sauce
1/4 Cup Rice Wine Vinegar
2 cloves of Garlic, chopped, or you could use 3 tablespoons of pre-smashed Garlic in oil that you can buy in a jar
2-3 tablespoons of minced Ginger (I use crystalized Ginger)
1 1/2 cup of brown sugar
1 quart of water Plus 3/4 cup of water separate measurements
1/2 cup of Scallions chopped up
1/4 Orange Juice (you could use 3-4 tablespoons of frozen concentrate if you don't already have juice made)
2-3 tablespoons of lemon juice
1 cup Hoisin Sauce
Directions:
Preheat your oven to 350 degrees F.
In a deep baking dish, place your ribs evenly and pour a your 3/4 cup of water over the ribs and place them in the oven for about an hour to simmer. Be sure to cover the baking dish with foil to ensure they become tender.
Meanwhile, combine the remaining ingredients in a sauce pan and simmer about 10-15 minutes. Taste your sauce to ensure it has the sweetness or salty taste you wish for your ribs. I like my Asian ribs a little on the sweet side, but not sugary. If your sauce is too sweet, add a little bit more of the soy sauce to balance it out. Remove from heat and set aside.
Remove pan from oven and drain off any fatty liquid that has been melted off the meat, discard that liquid. Make sure your Ribs are back in place as a single layer in the pan. Pour Half your mixture sauce over the top, replace the foil and return dish to oven. Cook for additional 1 hour, check it to ensure meat is falling off the bone or can be cut with a fork. Let is stand for a few minutes while you boil up the remaining sauce until it is reduced and thickened. Once your sauce is thicker, remove from heat and pour it over the ribs to coat it liberally. Return dish to oven and cook for 1 additional hour uncovered. Serve ribs hot with fried rice or plain rice. Enjoy.
