Traditional Calzone is made with ham, Ricotta Cheese and Mozzarella Cheese. Toward the end of this post, you will see a variation of this receipt to include Spinach, Mushrooms and Goat Cheese.
Ingredients
1 recipe basic bread dough, recipe follows, or use pre-made
dough in your freezer section, follow directions.
1/2 cup fresh ricotta cheese
1/4 pound ham, cut into 1-inch chunks
1/2 pound fresh mozzarella, cut into 1-inch chunks
2 eggs
Sea salt and freshly ground black pepper
Extra-virgin olive
oil, for the crust
Directions
Preheat the oven to 350 degrees F.
Prepare the bread dough as directed, cutting the dough into
2 pieces.
In a medium-sized mixing bowl, combine the ricotta, ham,
mozzarella, 1 egg. Stir well and set
aside.
Flour your rolling pin and surface, then roll out your
dough. Makes 2 nice sized Calzones.
Spoon the filling into
the center of the dough. Using your fingers, rub extra-virgin olive oil on the
edge of the dough. Fold each round over itself to make a half-moon shape. Crimp
edges to seal the dough.
Beat egg and use pastry brush to spread across top of each Calzone. This will help make your dough turn perfectly golden brown during
cooking process.
Place in the oven and cook until the dough is cooked through
and golden brown, about 25 minutes.
Serve
immediately upon removing from oven with marinara sauce for dipping.
For a variation you
can stuff a Calzone with anything kind of cheese, meat or veggies. Experiment
and enjoy the cooking process. Cooking after all is a trial and error
experiment, enjoy the journey.
