 Spanish Chicken and Rice


Ingredients
                1 chicken (3 pounds), cut up or just use thighs (1-2 per person)
                1 teaspoon garlic
                1 teaspoon celery salt
                1 teaspoon paprika
                1 cup uncooked rice
                1/2 cup chopped onion
                1 cup chopped green pepper
                1/4 cup minced fresh parsley
                1-1/2 cups chicken broth
                1 cup chopped tomatoes (canned is just as good)
                1-1/2 teaspoons chili powder
                 1 teaspoon of cumin  

Directions

Place chicken in a baking pan. Combine garlic, celery salt and paprika; sprinkle over chicken. Bake, uncovered, at 350° for 30 minutes.

Remove chicken from pan. Combine all ingredients in a bowl and mix together well. Poor into baking dish, and place chicken on top of rice mixture.   Cover and bake for 40 minutes or until chicken and rice are tender. Yield: 4-6 servings.
