Chicken and Spinach Salad
Single Serving
Ingredients:
1 Chicken Breast
1 Cup of Fresh Baby Spinach, washed and drained
1/4 Cup Yellow Squash, washed, drained and sliced
1/4 Cup Zucchini, washed, drained and sliced
1/4 Cup Radish, washed, drained and sliced
1/4 cup shredded carrots
Olive Oil
Chicken Seasoning - your favorite
Vinegar, or your favorite Salad Dressing
optional: dried cranberries, favorite nuts
Directions:
You can either cook your Chicken Breast in the oven, or sautee it in a pan, it is up to you and your schedule. I prefer to slice my Chicken Breast, season it with my favorite seasoning (Asian 5 Spice by McCormicks), then saute it in a little Olive Oil in a pan. Once it is cook, set aside and let cook slightly. Meanwhile, place all ingredients in a large salad bowl while the Chicken is cooking. Place Chicken on top, add your salad dressing and enjoy a light, but healthy meal on that busy day of the week.
