Orange Mango Chicken over Rice
Olive Oil
4-6 boneless chicken breasts
1/4 teaspoon of Thyme
1 lemon, juiced
1 cup orange juice
1 mango, peeled, seeded and sliced
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/2 teaspoon curry
1/2 cup raisins
1 cup of cooked spinach (1/4 cup per serving)
2 cups cooked rice (1/4 cup per serving)
Directions:
In a large mixing bowl mix thyme, cinnamon, ginger, curry and juices. Cut up mango and set aside.
Oven Directions - preheat oven to 375 degrees
Using a large baking dish, place all chicken in dish, cover with mixture, mango slices, and raisins, cover with aluminum foil and cook for 25 minutes in oven. Remove foil, and cook for an additional 15 minutes.
Stove Top:
Using a large skillet over medium heat place olive oil in pan with chicken pieces. Cook 10 minutes on both sides until chicken is fully cooked. Remove chicken when cooked, set aside. Place mixture in skillet, along with mango slices and raisins and cook on high heat, watching and stirring constantly until juice thicken, approximately 5 minutes.
Assembly:
Place 1/4 cup of rice on dish. Then place 1/4 cup of spinach on top of rice. Then place one piece of chicken atop the spinach and spoon some of the mixture and juices over as shown in the picture above. Enjoy.
