 Bubble and Squeak



 

Bubble and Squeak is an old English dish that was usually served for lunch or second dinner leftover from a scrumptious Sunday dinner. It is comprised of leftover veggies and mashed potatoes mixed together and fried up, then served with either a fried egg on top, or leftover meat and gravy. It doesn't matter what you serve with it, it's always good the next day. 


Ingredients: 
leftover mashed potatoes
leftover carrots, celery, leeks, cabbage, and peas
onion, finely chopped
4 tablespoons of butter
salt and pepper

Directions: 

In your largest skillet melt the butter then add onions, cooking onions until clear, about 2-3 minutes. Then add mashed potatoes and veggies. Since the veggies are already cooked, it doesn't take long to mix it all together in the pan, and fry it up - about 10 minutes or so to reheat everything together. There is added flavor if you can get it to slightly brown on both sides before serving, but it's not necessary. Enjoy!
