Potato Salad
Ingredients:
5 lbs. Potatoes
1 medium onion
4 stalks of Celery
Mayonnaise
Olive Oil
White Vinegar
Celery salt
Accent
Directions:
Peel, cube and cook your potatoes in a large pot of boiling water until soft. Meanwhile, dice up your onion and set aside. Cut up your celery and set aside. Measure out 1/2 cup of Mayonnaise, 2 tablespoons of olive oil, 2 tablespoons of white vinegar. When potatoes are done cooking, remove from stove and drain in a colander and let cook for a few minutes. (I generally run cold water over the potatoes for a minute to help cool them off faster). Once your potatoes are completely drained of all water, place them in a large mixing bowl, add oil and vinegar and mayonnaise, toss gently with a spoon. Add celery and onions, again gently toss with spoon. Add 2 tablespoons of celery salt, then sprinkle the accent over the top, again toss gently with spoon. Place in fridge for 2 hours to chill and set. ENJOY!
