Bok Choy with Scallops
Ingredients:
8 Scallops per person
1 Bok Choy per person
Marinade:
2 tablespoons soy sauce
1 tablespoon honey
2 teaspoons freshly grated ginger
1/2 teaspoon of lime juice
Marinade Scallops for 20 minutes before cooking.
Bok Choy
1 clove crushed and diced Garlic
1 tablespoon of sesame oil
1 Bok Choy per person, cut in half length-wise
Directions:
On flat already hot griddle, or skillet, pour your sesame oil and place your Bok Choy and garlic and cook for a few minutes, or until the white part of the Bok Choy becomes wilted (soft). You don't want to burn the vegetable, just make it go limp.
In another hot skillet, add a little olive oil to the pan and add your scallops and cook for 2 -3 minutes until scallops turn opaque. Add in the marinade juices and stir. Remove from pan.
Assembly:
On a warm plate place a few pieces of Bok Choy in center, alternating pieces in opposite direction (presentation remember, food presentation is one key to successful cooking) place scallops 8 pieces of scallop on top of the Bok Choy, then drizzle the warmed marinade over the top. ENJOY!
