Homemade V8 style Juice




Ever have a cold glass of V8 juice and wonder how hard it would be to make it? I've always wondered and decided to try it out, it's not that hard at all, just time consuming. Here's how you make it. By the way, this is one simple recipe, there are tons of others out there to try, but I decided on this one because I love spicy V8 juice.

Ingredients: 

1 1/2 tablespoons Virgin Olive Oil
7 medium-large tomatoes, chopped (I used 4 Roma and 3 Beef Steak Tomatoes)
1/2 onion
3 cloves of garlic, chopped
2 carrots, chopped
1 celery stalk
1/2 beet
4 good pieces of lettuce, chopped
1 small hand-full of spinach, chopped
1 small hand-full of watercress, chopped
1 green pepper, chopped
1/4 cup parsley, chopped
salt and pepper to taste
2 tablespoons Worcestershire sauce
1 tablespoon of hot sauce

(Note: feel free to throw in any type of veggie to this recipe as you desire, it doesn't have to be only 8 veggies.)

Directions: 

In a large soup pot heat the oil over medium heat, then add all ingredients to pot and allow to simmer, stirring occasionally. The objective here is to allow the veggies to break down slowly and become soft. If necessary, you can add a 1/4 of water to the pot to ensure the veggies don't stick to the bottom of the pot while you're cooking the veggies. Cook on medium heat for about 45 minutes.  Remove from heat and allow to cool for about 15 minutes - do not strain it or do anything with the mixture, just let it cool naturally.  Once slightly cooled, transfer mixture to your blender and puree it until all vegetables have been smoothed. You want a consistency of a thick liquid, but we both know there will be chunks of veggies lingering, keep blending until smooth.  To remove the chewy remnants of the left over veggies, either transfer your mixture to a food mill, or place a small strainer over a bowl and slowly transfer your mixture to the strainer. All the mixture to strain until all liquid has been squeezed out of the pulp.  Don't be afraid to get your hands dirty in this process.  The liquid will still be slightly thick, but worth every minute of it when you have your very own V8 juice.

Once you get the hang of making homemade juices, consider making in bulk and reuse other juice containers to store your liquid pleasure. Enjoy!
