Roast Pork on the Barbie


I personally love a good roasted pork anytime of the year, but when the grill is active, my craving becomes overwhelming. Once you try this, you'll feel the same way.

Ingredients:

4-6 lb Pork Roast
1/2 cup liquid smoke
2 cups of water

Place aluminum foil into a metal or glass pan, enough to ensure you can make a closed pouch. Place your roast in the middle of the foil, cover with liquid smoke and water, close up all ends tightly. Place your pan on the grill, on medium low for 1 hour. Your temp guide should show between 350-400 degrees.  I usually uncover the roast during the last 20 minutes of cooking, this allows the top to get nice and brown. Plus I can check on the liquid base of water and smoke. If your liquid is drying up, add about 1/2 cup of water to ensure your meat doesn't dry up during those last 20 minutes.   Serve with mashed potatoes, roasted potatoes, your favorite potato salad, or any side dish at all. I prefer sauteed sauerkraut and cold apple sauce. Yum Yum, now I'm hungry again.
