Scallops with Pesto sauce is quick and easy.
Make linguine as directed on package.
You can either use a jar of Pesto already made, or make it yourself.
Fresh Basil leaves, about a hand full worth
20 Pignoli Nuts
Olive Oil
Using a mortar and pestle as pictured below, grind up your basil and pignoli nuts with a little olive oil until completely ground into a paste. Scoop out paste and place in a regular bowl, add oil slowly while mixing up. You should be able to spoon the paste and drizzle when you're done.
In a hot skillet brown up your scallops in butter until golden brown. Once cooked, remove the scallops and pour into the skillet the pesto, you might need to add a little more oil to ensure you don't loose consistency. Add in your pasta and toss until mixed well. Serve pasta with a few scallops on top and Enjoy!
