This bread is great with Moroccan Chicken or Veggy Curry (recipe is on this blog).
Ingredients:
1 Packet of Active Dry Yeast (per directions)
1 tsp Honey
1 cup warm water
1 cup Coconut Flour
1 cup Brown Rice Flour
2 tsp Xantham Gum
1/2 tsp Garlic Powder
1/2 tsp Oregano
1/2 tsp Basil
1/2 tsp sea salt
4 tsp Olive Oil
2 tsp Cider Vinegar
Directions:
Preheat oven to 400 degrees. Mix honey in water in a small bowl then add yeast. Set aside until yeast is foamy. In a large bowl mix the two flours together, retaining half a cup for use later. Then add potato starch, xanthan, garlic powder, spices and sea salt, whisk together. By hand, mix thoroughly. Once yeast is foamed up, add to the mixture and blend completely. Add in olive oil and vinegar, continue mixing. The dough will be sticky, and this is when the remaining flour can be added tablespoon at a time until the dough is workable. You want the dough to form a small ball that is not sticky, so continue adding flour until you have this type of consistency. Then roll your dough out and lay flat on either a cookie sheet, or pizza pan. Bake for 10 minutes. Remove and cut up into pieces, serve warm with a main dish. Enjoy it.
