Lasagna Rolls with Red Sauce
This dish is so simple and easy to make, you'll thank me for introducing you too it. Not only is it light and filling, it's delicious!
Ingredients:
8 lasagna noodles, cooked according to package directions
1 package of frozen spinach, chopped, thawed and drained
1 pound of ham, (get a slab in your deli section of your grocery store) diced
1 container (15 oz) ricotta cheese
1/2 cup Romano cheese
1 egg
1/2 teaspoon dried Italian seasoning
Salt and pepper
1 32oz jar of your favorite tomato sauce
1 package of mozzarella cheese
Directions:
Preheat your oven to 350 degrees. Lay out your lasagna noodles on either wax paper, or use 2 of those plastic flat throw away cutting sheets. Squeeze your spinach to ensure it is not filled with water. In a mixing bowl, combine your spinach, ricotta, Romano, ham pieces, egg, and seasoning mixing well. Spoon out just shy of 1/3 cup of your ricotta mix onto each noodle, spreading it out evenly. Roll carefully and place in your baking dish, seam side down. Once all your noodles have been filled, rolled and placed in dish, cover with tomato sauce and mozzarella cheese. Sprinkle a little extra Italian seasoning on top, then bake for 30-40 minutes, or until cheese is just slightly golden brown. Calculate 2 rolls per person, serve with salad and a fresh garlic bread or roll. Enjoy.
