Ingredients:
Crust
1 package dry active yeast
1 tsp honey + 1 cup warm water (follow directions and temp on back of yeast package)
1 cup Brown Rice Flour
1 cup Barley Flour
1/2 cup potato starch
2 tsp xanthan gum
1/2 tsp garlic powder
1/2 tsp oregano
1/2 tsp basil
1/2 tsp sea salt
4 tsp olive oil
2 tsp cider vinegar
Toppings:
1 package Quark
1 package sliced mushrooms
1/2 bag fresh spinach
1 package chicken sausage
1 lb. ham cubed
1 bag Shredded Mozzarella Cheese
1/2 bag Shredded Pepper Jack Cheese
Sauce:
2 lbs. Roma Tomatoes, sliced and diced
3 cups water
1 large can tomato sauce
1 med. can tomato paste
2 tsp basil
2 tsp oregano
2 tsp garlic powder or 1 whole clove diced
Directions in Three stages:
Stage 1: In a large pot, make your sauce. Core and Dice your Roma tomatoes, then place in pot with water - boil until tender. Add in your herbs, tomato sauce and paste. stir completely. Simmer until completely cooked. About 35 minutes on medium heat.
Preheat oven to 400 degrees.
Stage 2: Prepare your crust. Follow the directions on the yeast package, add honey to the mixture to help activate the yeast faster. Will take about 5 minutes for it to begin to foam, so be patient. Mix the two flours together, then remove 1/2 a cup and set that aside. Then begin to add starch, xanthan, and spices together with the flour, mix well. Add in olive oil and vinegar, mixing thoroughly. Once you have a ball of dough, remove from bowl and place on floured counter, roll it out to fit a 13 x 9 baking pan. Spray pan with oil and bake for 10 minutes. Remove from oven and prepare your toppings.
Stage 3: In a skillet with lid, saute cubed ham and sausage in a 1/2 cup of water and a tablespoon of olive oil. You're basically warming the meats. Once they are heated completely and the water is burned off, turn off burner and get ready to create your pizza casserole. On top of the cooked crust, begin placing some sauce on the crust, then begin to add your toppings - layered as if you're creating a lasagna, but without noodles - sauce, meats, veggies, cheese, sauce, meats, veggies, cheese, two layers only. This is a heavy casserole. Once you've compiled your casserole, place it in the oven and cook it for 10-15 minutes (you want the cheese to be melted and slightly golden browned). Enjoy.
