What to do with that Turkey Carcass?


Every year I am asked what to do with the carcass of a Turkey, and my answer is always the same - TURKEY SOUP!

Grab a large soup pot, place carcass in and fill up with water that just covers the top of the carcass. Boil for about an hour, then remove carcass and let cook. Meanwhile, let the liquid cool off, then store in a tight seal container until ready to make soup, or turkey pot pie. Once the carcass is cooled, pick off all the remaining meat, then store it in the freezer. Be sure to label both liquid and meat for easier find in the freezer.   Once you are ready to make your soup, or other meal, just defrost the liquid and meat, and have at it. Simple as that.
