INGREDIENTS
• 1 1⁄2 lbs boneless pork loin or 1 1/2 lbs pork tenderloin
• 1⁄4 cup lemon juice
• 1⁄4 cup olive oil
• 4 garlic cloves, smashed
• 1 tablespoon dried oregano
• 1⁄4 teaspoon salt
• 1⁄4 teaspoon pepper
1/2 Onion
• 3⁄4 cup prepared tzatziki, sauce (make your own, recipe below)
• 6 Greek pita bread
DIRECTIONS
Trim and cut pork or lamb into 1-inch cubes and set aside.
Cut onion into slices and split into slivers.
In a large bowl, mix together lemon juice, oil, garlic, oregano, salt and pepper.
Add pork and onion pieces, stir to coat all pieces.
Marinate for 10 minutes (You can make ahead 24 hours, cover and refrigerate).
You can either sauté the meat and onions in a saucepan until onions are translucent and meat cooked through, or you can skewer the meat and onions and cook in the oven for 30 minutes. You can also cook the skewers on a barbeque for 20 minutes.
Spread tzatziki over each pita.
Serve hot and enjoy with a slice of lemon on the side.
Tzatziki Sauce Recipe
Prep time: 15 minutes makes 3 cups
3/4 English cucumber, partially peeled (striped) and sliced
1 tsp kosher salt, divided
4 to 5 garlic cloves, peeled, finely grated or minced (you can use less if you prefer)
1 tsp white vinegar
1 tbsp Early Harvest Greek Extra Virgin Olive Oil
2 cups Greek yogurt (I used organic fat-free Greek yogurt, but you can use 2% or whole milk Greek yogurt if you like or you can just use fresh sour cream as one of the cups of yogurt as a replacement)
1/4 tsp ground white pepper
Warm pita bread for serving
Sliced vegetables for serving
