I was first introduced to a fajita at a place called Cowboy Cafe Restaurant in Arlington, Virginia. Whenever I walked into the restaurant, no matter if I just left a 7-course meal at the White House, If I smelled a Fajita walking past me, I had to order one. They were that good. To this day, I love a beef or chicken fajita or a combo of both types of meat in one fajita. So I came up with my own Fajita seasoning mix recipe to always have on hand. Here is my recipe
2 teaspoons chili powder
1 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon dried oregano
1teaspoon salt
1 teaspoon sugar
1/4 teaspoon cayenne pepper
Combine all ingredients in a bowl when needed sprinkle seasoning into the frying pan over the specified meats to allow flavors to kiss the meat while it cooks. Then store in an air-tight container for at least 9 months. Enjoy!
