Sausage Gravy



 When I moved to the South, I fell in love with biscuits and gravy, but I didn't know how to make it where it tasted the same as my brother-in-law's restaurant made it. One day I begged George to show me or teach me how to make it like he does every morning and he did. Here is his recipe, hope you enjoy it as much as I enjoy making and eating it. 

Ingredients to make homemade breakfast sausage

1 tablespoon Brown Sugar
2 teaspoons Dried Sage
2 teaspoons Salt
1 teaspoon Black Pepper (ground)
¼ teaspoon Dried Marjoram
0.12 teaspoon Red Pepper Flakes (crushed)
1 pinch of Ground Cloves
2 pounds of Ground Pork

Mix together all the above ingredients and place in an airtight container and leave in the fridge overnight to ensure the flavors are melded together with the sausage meat. 

Ground Pork Mixture or store-bought breakfast sausage  
1/2 stick of butter
3 tablespoons of Worcestershire sauce
3 tablespoons of all-purpose flour
3 cups of milk 


Directions: 
In a large skillet (deep one or in a deep saucepan) Cook sausage until golden brown, breaking it up as you cook it. Once cooked, remove sausage from pot/pan and set aside. Retain a bit of the juice for later use. 

Leave a couple of tablespoons of the sausage fat in the pan and add in your butter to melt. Once melted begin to add your flour 1/4 cup at a time until you have a roux (should smell a little like peanuts). I use a whisk to make mine and continue to add butter until I have a good amount of rue. (I like leftovers of gravy). Then begin to add in your milk slowly and mix well with your whisk.  Once you have a good gravy made and to the thickness you desire begin to add your sausage back into the pot/pan along with the Worcestershire sauce. Taste test until the mixture is to your liking. 

Once you achieved the consistency of gravy you desire, pour over warm biscuits and enjoy with scrambled eggs and fresh fruit.
