Lobster Bisque soup is my all-time favorite soup, probably because I love Lobster so much. When I can afford lobster, I love to make a Bisque soup. Here's how I make it.
Ingredients
1 stick of butter
1 medium onion chopped
¾ cup of flour
2 - 14.5 ounce cans of chicken broth
4 - 1 ¼ pound lobsters, cooked and meat removed or 15 ounces of lobster meat,
1 large bay leaf
2 tablespoons tomato paste
3 cups light cream or heavy cream
salt & pepper to taste
¾ cup dry sherry
INSTRUCTIONS
In a large saucepan, melt the butter over low heat. Add the onions and cook for 2-3 minutes until it starts to soften. Do not allow them to brown.
Using a whisk, mix in the flour and mix well, until you have a paste. Make sure that all of the flour is mixed in well.
While whisking constantly, slowly begin to add the chicken broth. You must make certain that you dissolve all the flour into the broth and that it's a completely smooth texture.
Once all the broth is in the pan, begin to increase the heat to medium and continue to cook until the soup thickens. Then add in the lobster meat and bay leaf and simmer on low for about 20 minutes, stirring occasionally.
Stir in 1/2 the sherry and the bay leaf. Simmer on low heat for another 20 minutes. Stirring occasionally. I usually add 1/2 the sherry into the pot at this stage along with the tomato paste and whisk it together. You don't want an orange color, but rather a pinkish color. Slowly drop in the cream and lobster meat, stir it up, and heat completely for another 10-15 minutes. Do not bring it to a boil. Then when I serve the soup, I drop some of the sherry on top to add a little more flavor. Serve with a nice piece of fresh bread, I prefer Garlic bread. Enjoy.
