Chicken Caprese for One


Chicken Caprese for one is an awesome dish to use up those fresh picked tomatoes and basil from the garden. 

Ingredients: 

Olive Oil 
Salt and Pepper
2 pieces of chicken breast
handful of fresh basil 
Minced garlic about 2 tablespoons
4 Roma tomatoes cut up and quartered
Fresh Mozzarella cheese cut into thick slices 
Balsamic Vinegar

Garlic Bread

Serve over pasta or rice depending on what you're in the mood for along with crusty garlic bread. 

 Directions: 

In a skillet place some olive oil in the pan and heat up over medium heat. Once hot place chicken breast into the pan and cook on each side for about 3-4 minutes or until golden brown then turn over. Once both sides are browned, remove from pan and replace with garlic and tomatoes. Stir and then add salt and pepper to taste. Add fresh basil cut up using your fingers, not a knife. stir together. then replace the chicken on top of the tomatoes and sprinkle a little Balsamic Vinegar over top. Then turn over the chicken and after about 5 minutes place more basil on top along with fresh mozzarella cheese on each piece of chicken. Cover and simmer until the cheese is completely melted.  Serve over either rice or pasta cooked according to package directions and crusty garlic bread. Enjoy
