Goulash for one


 Even though this recipe is designed for a one-serving dish, I usually double it so that I can get a minimum of two servings out of it. Saves time in making lunch or dinner during the week. Just reheat the leftovers for another meal. So, let’s make some goulash together.

Ingredients

1 tablespoon Olive Oil

½ cup Onions (chopped)

½ cup Green Bell Peppers (chopped)

4 ounces Ground Beef

1 clove Garlic diced

½ cup Tomato Sauce

½ cup Tomatoes (canned diced)

½ cup Water

1/2 cup of Elbow Macaroni

 Directions:

In a skillet over medium-high heat, heat oil for 30 seconds. Add onions and peppers and cook, stirring occasionally, for 3-4 minutes or until tender. Add your garlic and ground beef, breaking up the ground beef and stirring occasionally until the meat is no longer pink and is starting to brown, 5-7 minutes. Then stir in tomato sauce, diced tomatoes, and water and bring to a simmer. Reduce heat to low and simmer for another 5 minutes, stirring occasionally.

In the meantime, cook your macaroni in a pot of boiling water. 2 ounces of macaroni should be equal to ½ cup of dried pasta. Once cooked to your liking, add pasta to the other pot with meat sauce and mix together, then serve and enjoy while hot. Top with shredded Romano cheese and enjoy.
