Swiss Potato Soup

 


If you love Bacon, swiss cheese, and potato soup, you are going to love this soup because it has all three ingredients.  The first time I had this I fell in love with it. Hearty, filling, and full of flavor. Try it you'll love it. This recipe makes 4 servings:

Ingredients: 

1/2 lb. bacon, cooked to crispy and crumbled

1 medium onion, diced

2 cups chicken stock

6 potatoes, cubed

1/2 teaspoon black pepper

1/3 cup flour

2 cups cream or 1/2 and 1/2

4 oz. Swiss cheese, freshly shredded

Directions:

Cut bacon up and cook it in a frying pan until crispy. Remove from pan and reserve 1 tablespoon of grease.  

In the same pan, sauté onions over medium-low heat to tender.  Add chicken stock, potatoes, and black pepper to the pan. Bring to a boil and cook for about 15 minutes until potatoes are fork-tender. In a bowl, combine cream and flour until smooth. You have two options at this point. You can leave the potatoes in the pan in chunks or you can place contents into a blender and blend until smooth. Once you've decided, slowly pour your cream mixture into the potato mixture bring it back to a slight boil, and cook until it thickens. About 3- 5 minutes.  Add Swiss cheese and allow to melt stirring continuously until smooth. 

Remove pan from heat add shredded cheese and bacon on top and serve. Taste and adjust spices as needed.
