Grilled Veggies

 


The second-best thing that can come off a hot grill after a steak or chicken would have to be grilled Veggies, like onions, mushrooms, peppers, or even zucchini. 

There are several ways to cook veggies on the grill. Here are a few ideas:

    DIRECTLY ON THE GRILL– We went with this method, just add the vegetables straight onto the grill.

    SKEWERS– Wooden or metal grilling skewers may be used. Just add the veggies onto the skewers and grill. (Tip: If using wooden skewers, be sure to soak them in water so they don’t burn.)

    BASKET– You can use a grill basket and add the veggies into the basket and grill until cooked.

Ingredients

½ lb zucchini ½” slices

6 oz white mushrooms whole

1 medium red onion, quartered

1 medium red or green pepper, sliced into four or five

Grilled vegetables marinade-

1/4 cup oil

1 tsp salt

½ tsp ground black pepper

¼ tsp garlic powder

¼ tsp onion powder

¼ tsp ground paprika

Instructions

Rinse and cut your veggies. Prepare the marinade.

Add the veggies to a large bowl and toss with the marinade. Marinate for about 30 minutes or up to 8 hours, keep tightly covered.

Once the grill is hot, add the vegetables to the grill. Cook the veggies for about 8-10 minutes (about 4-5 minutes per side). Cook until the vegetables are browned and reach desired tenderness.

Add the vegetables into a serving bowl and top with fresh chopped greens for serving.
