While I personally don’t eat avocado’s,
I know tons of people who swear by them. However, I was given this recipe bye a
chef friend of mine to include this Month’s recipe lineup for those who love Avocado’s
and Cilantro. Enjoy. I’ve been told that this also makes a great dip for chips
and veggies if you incorporate the entire avocado when making this recipe.
Ingredients
¼ cup dairy-free
yogurt, unsweetened
½ avocado
1 cup cilantro,
packed
2-3 tablespoons lime
juice, fresh-squeezed
1 teaspoon agave or
maple syrup
½ teaspoon garlic
powder
½ teaspoon cumin
½ teaspoon Himalayan
salt, more to taste
fresh cracked pepper, to taste
⅓-1/2 cup filtered
water, as needed
Instructions
Place all the ingredients into
a blender or food processor. Start out with ⅓ cup water and add as needed.
Blend until smooth.
Taste for seasoning and add as
needed. Dressing can be saved in airtight container for up to 1 week in
fridge.
