As many of you know I’m a historian and love to root out the history behind recipes and things. And there’s a history behind the original Green Goddess Dressing. In 1923, chef Philip Roemer of the Palace Hotel in San Francisco crafted green goddess dressing to honor the play The Green Goddess starring George Arliss, the first British Academy Award winner. However, beneath its surface lies a troubling portrayal: Arliss plays an unnamed Indian king while all other roles are filled by white actors in brownface. A product of its time yet deeply flawed today.
Ingredients
2 anchovy filets
1 clove garlic, grated
1/2 shallot, roughly chopped
Zest of 1/2 lemon
Juice of 1 lemon
3/4 cup mayonnaise
3/4 cup whole milk Greek yogurt
3/4 cup packed freshly chopped
parsley leaves
1/4 cup packed freshly chopped
mint leaves
1/4 cup packed freshly chopped
basil
2 green onions, thinly sliced
2 Tbsp. freshly chopped chives
1 1/2 tsp. kosher salt
3/4 tsp. freshly ground black
pepper
Directions
In a blender, blend all
ingredients until smooth. Scrape down sides of the blender with a rubber
spatula to make sure all ingredients are incorporated. Season with more salt
and pepper to taste.
Refrigerate in an airtight
container for up to 1 week.
