Peanut Dressing

I first had this dressing at a Chinese Restaurant my brother-in-law took me to for lunch. I absolutely fell in love with it so much that the owner sent me home with a container of it for my own use. Once I got it home I disected it and came up with recipe. My brother-in-law admitted that it was the best he'd ever tasted and was spot on to the restaurants dressing. This versatile dressing also works wonders as a marinade, dip, or stir-fry sauce!

Ingredients

½ cup smooth all-natural peanut butter

¼ cup lime juice

1 tablespoon soy sauce

1 tablespoon ginger (finely minced)

2 teaspoons toasted sesame oil

2 cloves garlic (finely minced)

¼ – ½ cup water (see notes)

Sea salt (to taste)

1/4 cup brown sugar ( add to mixture at a teaspoon at a time) taste inbetween additions.

Instructions

In a medium-sized bowl, whisk the peanut butter, lime juice, soy sauce, ginger, sesame oil, and garlic. Thin with the water, starting with ¼ cup.

Combine all ingredients until smooth. add brown sugar to mixture a teaspoon at a time and taste inbetween additions. Taste and add salt if needed.
