Beef Stroganoff is undeniably
a classic comfort food. However, we
believe that the easiest method to prepare it is with Slow Cooker Creamy Beef
Stroganoff! My mother found this recipe in the newspaper back in the 60s and
handed it down to me with her other quick and easy recipes for the crock pot. She
used to call it a dump and go recipe that made life easy and simple. Simply add
your raw ingredients, along with cream of mushroom soup and beef broth, into the
slow cooker. Let it simmer, stir in sour cream at the end, and serve over egg
noodles for a delightful meal!
Ingredients
2 cans (10.5 ounces)
Campbell’s® Condensed Cream of Mushroom Soup
1/4 cup Swanson® Beef
Broth or your own homemade beef broth
3 tablespoons Worcestershire
sauce
3 cloves garlic, minced
12 ounces white mushrooms,
sliced (about 4 cups)
3 medium onions, coarsely
chopped (about 1 1/2 cups)
2 pounds boneless beef round
steak, cut into thin strips
12 ounces (about 7 cups) uncooked medium
egg noodles
1/2 cup sour cream
Instructions
For an extra layer of flavor,
brown the beef in a skillet before adding it to the slow cooker (you can
even mix the soup and broth in the skillet to stir in any flavorful bits left
behind from the browning).
Stir the soup, broth,
Worcestershire, and garlic in a medium bowl.
Place the mushrooms and onions into a 6-quart slow cooker. Top with the beef. Season the beef with salt and pepper. Pour the soup mixture over the beef. Cover and cook on LOW for 8 to 9 hours or until the beef is fork-tender.
Cook and drain the noodles
according to the package directions during the last 20 minutes of the cooking
time. Stir the sour cream in the cooker. Season to taste.
Serve the beef mixture with the noodles. Serve sprinkled with chopped
fresh parsley, if desired.
