Minestrone Soup

 


Absolutely! This Crock Pot Minestrone Soup is a cozy, veggie-packed classic that practically makes itself. That’s the key to crock pot meal, you add all the ingredients to the pot and set it, then come back in 6-8 hours and your dinner is cooked. Momma Videccia would have loved the crock pot, but alas she didn’t live long enough to enjoy it. However, I’ve adapted her recipe to cook in a crock pot. Enjoy!

Ingredients

1 can diced tomatoes

1 can crushed tomatoes (14.5 oz can)

3 carrots peeled and diced

2 large potatoes peeled and diced

2 celery stalks diced

1 white onion diced

1 Tablespoon minced garlic

1 Tablespoon Italian seasoning

1 teaspoon salt

1 teaspoon pepper

2 bay leaves

4 cups vegetable broth if I don’t have veg broth, I use beef broth

2 cups water

1 can red kidney beans (15 oz can) drained

1 can cannellini beans (15 oz can)

8 oz frozen green beans

1 zucchini diced

¾ cup ditalini pasta

Instructions

Place everything in the crock pot except the zucchini and pasta.

Cover and cook on low heat 6-8 hours or high 3-4 hours until the potatoes are tender.

Remove the bay leaves and then stir in the zucchini and pasta.

Cover and cook on high for an additional 15-30 minutes until pasta is tender.

Stir and serve warm with fresh garlic bread. Enjoy!

You can store in refrigerator in an airtight container for up to 5 days. Or freeze for up to 3 months.
