The Mediterranean is filled with
various mezze spreads, but Greece has their own that is to die for. Skordalia
is a hearty and rich Greek garlic dip that will make your heart sing, and your taste
buds do a happy dance.
Skordo means Garlic in Greek,
ergo Skordalia. If you like mashed potatoes and garlic, you will love this dip,
because it combines both in a luscious blend of amazing tastes. If you don’t
want an overpowering garlic taste you can cut back on the garlic, but why would
you want to do that?
Skordalia is a thick yet
spreadable dip made with a either day-old bread or potatoes. I only use potatoes
because it tastes so much better, then you can dip the day-old bread into the dip
and enjoy.
Ingredients
1 medium potato
4 oz
2 cloves of garlic
1 tsp minced fresh
rosemary
1/2 tsp dried Greek
oregano
1/2 tbsp white wine
vinegar
1/2 cup good quality
olive oil
1 tbsp Greek yogurt
salt and pepper to season
Instructions
Boil the potato in its skin to
keep the flesh as dry as possible then peel and mash
Peel garlic and press through a
garlic crusher and add to the mashed potato
Revitalize the dried oregano by
adding 1/2 tsp boiling water to it for 5 minutes then press out the water, Add
this and the rosemary, vinegar, oil and yogurt to the potato and mix thoroughly
Season with salt and pepper to
taste and add a little water if the sauce is too thick
