Skordalia – Greek Garlic Dipping Sauce

The Mediterranean is filled with various mezze spreads, but Greece has their own that is to die for.  Skordalia is a hearty and rich Greek garlic dip that will make your heart sing, and your taste buds do a happy dance.

Skordo means Garlic in Greek, ergo Skordalia. If you like mashed potatoes and garlic, you will love this dip, because it combines both in a luscious blend of amazing tastes. If you don’t want an overpowering garlic taste you can cut back on the garlic, but why would you want to do that?

Skordalia is a thick yet spreadable dip made with a either day-old bread or potatoes. I only use potatoes because it tastes so much better, then you can dip the day-old bread into the dip and enjoy.
