Raspberry Swirl Brownies
¾ Cup of Raspberries
1 stick of butter
2 tablespoons water
8 ounces of dark chocolate
½ cup of oil
3 large eggs
1 cup sugar
1 teaspoon vanilla extract
1 teaspoon salt
¾ cup flour
½ cup cacao powder or cocoa powder
In a small saucepan over medium heat reduce the raspberries
down to a puree, after 3 minutes remove from heat and transfer to a food
processer and puree the raspberries along with ¼ of stick of butter and water
until completely smooth. Then set aside
Place chopped up chocolate in a stainless steal pan with
remaining butter and oil, set the bowl over a sauce pan filled with water and
allow the water to come to a boil, then reduce to half heat and allow the
chocolate to melt, stirring to ensure all chocolate melts to a smooth
consistency. Set aside.
Preheat oven to 325 degrees F. Coat a 9 inch pan with baking
spray and line the bottom with parchment paper for easy access and removal of
brownies after cooking.
In a large bowl, combine eggs, sugar, vanilla and salt until
smooth about 3 minutes. Whisk in the flour and chocolate powder. Fold all
together until smooth, then add the melted chocolate until well combined.
Spread the batter in the cooking pan. Drop the raspberry
mixture on top then drag a knife across the top until the raspberry mixture is
smooth on top. Cook for 25-30 minutes until a toothpick is clean when inserted
into batter. Once cooked, allow to cool for 20 minutes before serving. Although
I can never wait that long. Enjoy
