Apple fritters are one of those desserts that you just can't say no to after an elegant meal. Easy to make and filled with some awesome goodness. Here's how to do it.
Ingredients:
1/2 cup of Apples peeled and diced. bite-size pieces (about 2 apples)
1/4 tablespoon lemon juice
1/2 cup of flour all-purpose
1/4 teaspoon ground cinnamon
1 teaspoon salt
1/8 teaspoon of baking powder
pinch of nutmeg or apple pie spice
pinch of ground ginger
1/4 tablespoon granulated sugar
1 egg at room temperature
1/3 cup of milk
1/4 tablespoon of melted butter
1/4 teaspoon vanilla extract
3-4 cups veggie oil for frying
Sugar glaze ingredients
1/4 cup confectionary sugar
1/2 teaspoon vanilla extract
2 teaspoons of milk or water (your preference)
Directions:
Peel and dice apples into bite-size pieces and place in a mixing bowl with lemon juice. Mix completely to ensure all apple pieces have been coated by lemon juice.
In a separate mixing bowl, combine eggs, milk, vanilla, melted butter (cooled), cinnamon, salt, baking powder, nutmeg, and ground ginger and mix together thoroughly with the flour.
Meantime, pull out your frying pan add 3-4 cups of oil, and heat on low heat. Oil must reach a temp of approximately 375 °F when you check it with a candy thermometer.
Use a large spoon or a 1-cup measuring cup to spoon your batter into the oil 1/4 cup at a time. Fry until golden brown, flip, and fry the other side. Let cool for about 5 minutes on a rack or plate. You can test to ensure they are cooked by sticking one with a knife and if it comes out clean, it's done. Just like how you test a cake. Repeat until all the batter is used.
Direction for Glaze:
In a small bowl mix sugar, vanilla, and milk or water (2 teaspoons) Add more milk or water if needed 1 teaspoon at a time. Mix until you have a consistency of being able to drizzle it over your fritters. Drizzle your glaze over fritters as soon as they are cooled.
Enjoy because these are yummy. A small batch means nothing will go to waste. Makes about 4 fritters with this recipe.
