Chicken Pot Pie
Chicken Pot Pie has always been one of my favorite comfort
foods since my childhood. My mother used to make it for me when the weather
changed to fall. She also taught me how to make it so that I could make it myself
when I got older. It wasn’t long after she taught me the technique and recipe
that she passed away. So of course, every time I make it, I think of her and I
in the kitchen making it together. These are the fun memories I think about
while cooking. So, allow me the honor of teaching you how to make my mother’s
famous chicken pot pie.
Servings: 6
Preheat oven to 425 degrees F.
Ingredients:
3 cups cut up chicken.
1 package of frozen peas and carrots
3 potatoes, peeled, cubed.
½ teaspoon salt
¼ teaspoon pepper
¼ cup chopped onion
2/3 cup of milk
2 cups chicken broth
1/3 cup of flour
1/3 cup of butter
1 can cream of chicken soup.
1 box refrigerated Pillsbury Pie Crust (2 count) room
temperature
Directions:
In a 2-quart saucepan, melt butter over medium heat, stir in
flour, onions, salt, and pepper. Stirring constantly, whisk until mixture
begins to bubble, then remove from heat. In a separate saucepan bring 2 cups of
water to a boil and add potatoes. Once potatoes are cooked, strain and set aside.
In the first pan, stir in milk and chicken broth and can of cream of chicken
soup and blend together. Return pan to heat and boil until thickened, add potatoes.
Peas and carrots and bring to a slow boil.
In a 13-inch square baking dish, roll 1 pie crust over the
bottom then pour the chicken mixture into crust line dish. Roll the second pie
crust over the top and crimp the edges and cut a slit in the top to ventilate steam.
Cook for 35 minutes or until top is golden brown. Serve with slices of bread or
garlic bread. Enjoy!
