Herby Champ

 

Herby Champ

Herby Champ is an Irish version of mashed potatoes that is by far amazing. If you've never had it should try it because it's a mixture of mashed potatoes, spring onion (scallions), heavy cream and herbs such as thyme and parsley. Talk about delicious! Yum! 

Ingredients: 

2 lbs potatoes, peeled and cut into chunks 
2 1/2 ounces of butter
1 1/4 cups heavy cream or half and half 
Pinch of salt and ground pepper
handful of spring onions (scallions) chopped
1 tbsp parsley
1 tbsp thyme

Cook potatoes as normal until tender - about 20 minutes or so. 
Mash potatoes with butter and heavy cream or half and half then add herbs and mix together completely, then add scallions to mixture. Check for seasonings and serve hot. Best served with roast beef or chicken.  Enjoy
