Ingredients
1
tablespoon butter
1 small
onion diced
1 pound
baby Bella mushrooms sliced (retain a handful to garnish top of soup)
1/4 cup
flour
1 teaspoon
Italian seasoning
1 teaspoon
fresh thyme
3 garlic
cloves diced
salt and
pepper
4 cups
chicken broth
1 cup
heavy cream
Instructions
In a large
pot add the butter, onion and mushrooms. Sauté over medium high until tender.
Add in the flour, Italian seasoning, thyme, garlic and salt, pepper and stir
until coated.
Add in the
chicken broth and simmer over medium high heat for 10 minutes. Add in the heavy
cream and let simmer for 10 more minutes.
Using either
a blender or immersion blender, pulse soup until smooth and creamy. Serve hot
and garnish with pieces of mushrooms and warm bread on the side.
