Brie with Pesto and Sun-dried Tomatoes

A baked brie dish is truly a culinary delight. It features warm, gooey brie cheese enveloped in crispy pastry, enhanced by the vibrant flavors of various toppings, where this one has fresh pesto and tangy sun-dried tomatoes. This combination creates an irresistible appetizer perfect for gatherings or intimate dinners. Serve it alongside crusty bread or crackers for an unforgettable experience!

Ingredients

16-ounce wheel, brie cheese white rind left on

8.5 ounce sun-dried tomatoes drained

¼ cup basil pesto

¼ cup roasted red peppers

Instructions

Preheat oven to 350 degrees F

Unwrap the wheel of brie cheese and place it in the center of your cooking dish, surrounded by sun-dried tomatoes in a circle.

Then spoon pesto sauce over the top of the brie and top with pieces of roasted red pepper on top of the pesto. Place it in the oven for 30-45 minutes at 350 degrees F. Check occasionally to ensure both sun-dried tomatoes and cheese are not burning. Check the wheel with a fork or toothpick to ensure the cheese is fully melted. Let it sit for at least 10 minutes before serving, as it will be plenty hot.
