Irish Boxty Potatoes

Aunt Kate used to say that the Jewish people had Latka’s, and the Irish had Boxty potato cakes. Both are similar but different at the same time. They can both be eaten plain, but I enjoy them with sour cream and chives or green scallions. I’ll eat them for a snack in the late morning or afternoon. With the Latka I’ll eat with sour cream, the Irish Potato Cakes I’ll either eat with sour cream or a sweet jam or marmalade, depending on my mood. These are easy to make & great for breakfast or as a snack.

Ingredients

1 lb potatoes

1 onion chopped fine

3/4 c all-purpose flour

1 tsp salt

1/4 tsp pepper

1 egg

1/2 c milk

1/2 c vegetable oil

Directions:

Set half of the potatoes aside for later. Peel and cut remaining potatoes into large chunks; place in a saucepan. Cover with cold water and bring to a boil over high heat. Reduce heat to low and cook for 20 minutes, or until tender. Drain and place in a large bowl. Mash potatoes and set the bowl aside.

Now peel and grate reserved potatoes. Stir them into the mashed potatoes. Add onion, flour, salt, and pepper; mix well. Stir milk and egg to form a batter.

In a large skillet, heat oil over medium heat. Drop batter from a tablespoon into the hot oil.

Cook for 4-6 minutes on each side. Until golden brown! Drain on a paper towel. Transfer to your serving dish and serve with applesauce and sour cream. But you can't eat just one!
