Irish Brown Bread

The first time Aunt Kate made Brown Bread for me I was absolutely hooked. This bread and her rye bread and of course her Irish Soda Bread are my three favorite breads to make. They are all simple to make and I always have the ingredients in my pantry. 

Ingredients

1 1/2 cups warm water, divided (about 110F)

1 tbsp molasses

1 pkg active dry yeast or 2 teaspoons of jar active dry yeast

3 1/2 cups whole wheat flour

1 tsp of salt

Instructions

PREHEAT oven to 400F. Bake in the center of the oven until golden brown, about 45 to 50 min.

Spray an 8 × 4-in. metal loaf pan with your choice of oil.

Stir 1/2 cup of water with the molasses and yeast in a large bowl until completely mixed. Set it aside until you see that the yeast is blooming (bubbling) Once the yeast has bloomed, stir in the flour, remaining water, and salt, using a wooden spoon, mix thoroughly. Transfer dough onto a floured counter. Knead once or twice, then shape into a log. Place in prepared pan. Cover with a damp towel and let rise until doubled in size, about 45 min – 1 hour.

Bake in the center of the oven until golden, 45 to 50 min. Let stand, for 5 min. Turn the loaf out onto a rack and let cool completely about 1 hour.
