Shamrock Salad
This veggie salad is called Shamrock Salad due to everything in it is green. Although the recipe doesn’t call for green peppers I usually throw them in to this salad because I love green peppers. They also add a little more flavor to
Ingredients: the salad.
1 bunch thin asparagus spear
1 cup sugar snap peas, trimmed
1 cup shelled fresh peas
¾ cup of Arugula
¾ cup of Baby Spinach
2 stick celery, sliced
DRESSING INGREDIENTS:
1 garlic clove
1 tbs extra virgin olive oil
3/4 tablespoon white vinegar
¾ tablespoon grainy mustard
Directions:
Remove woody ends from asparagus and cut into equal lengths.
Cook the peas and asparagus in boiling salt water for around
4 minutes or until just tender but still crisp. Do not overcook them and when
removed from water refresh them in a bowl of iced cold water. Drain, pat dry, and place into a bowl with Arugula, spinach and celery.
Combine the dressing ingredients, add salt and pepper to
taste, and mix well through. Pour over salad, and toss.
