Meatloaf for one
Every so often I have a craving for a meatloaf, but I don’t
want to make a large one that would feed a dozen people, just me. So I came up
with this recipe to ensure that I don’t have but one serving so as to not waste
food. Some recipes call for ketchup, but I prefer either tomato paste or a small can of tomato sauce in my
recipe.
Ingredients
1⁄2 slice of bread, crumbled
2 tablespoons carrots, finely shredded
1 tablespoon celery, chopped
1 tablespoon onion, chopped
1 tablespoon bell pepper, chopped
1⁄4 teaspoon salt
3 tablespoons Tomato Paste or 2 tablespoons chili sauce or
tomato sauce, divided
1⁄4 lb ground beef
black pepper
Directions
In a bowl, combine 1 tablespoon of Tomato Paste and all other
ingredients.
Shape into a loaf, top with 2 tablespoons remaining Tomato
Paste, and bake at 350 degrees for 35 to 40 minutes.
