Rosemary Pork Tenderloin
Here is another dish my mother used to cook often, her
Rosemary Pork Tenderloin. Oh boy, was it good. She would serve it with either
mashed potatoes or roasted potatoes and string beans, French Style, and a side dish
of apple sauce. Boy oh boy, was it good. No wonder why I make it the same way.
Ingredients
1 small pork tenderloin
1 sprig of fresh rosemary or a good pinch of dried rosemary
½ cup apricot preserves
½ cup horseradish mustard
salt and pepper
2 tablespoons Worcestershire sauce
Directions:
In a small bowl mix the apricot preserves with horseradish
mustard and the Worcestershire sauce.
Place pork tenderloin in a baking dish and cover with salt and
pepper all over. Then sprinkle with rosemary.
Pour mixture over top of pork and bake covered at 350
degrees for 20 minutes. Uncover the pork baste and cook for another 25 minutes.
Ovens and sizes of tenderloins vary so just make sure it cooks until it is not
pink inside.
