It’s going to be a hectic week
ahead, and this is your only day off for the next week, and you still have to
make dinner for your family. All you want to do is turn on a movie, lounge on
the sofa, and put your feet up. Then remember you have a crockpot, so up you go
to the kitchen and pull out that trusty crockpot and begin to throw ingredients
into the pot to cook all day while you relax. As the flavors meld together throughout the
day, you smell that garlic in the air, and you’re thinking of that long-ago
vacation in the Italian countryside where you smiled with a glass of wine in
hand, relishing in the peace and quiet of the valley below.
Ingredients
4 boneless, skinless chicken
breasts (about 1.5 lbs.)
4 cloves fresh garlic,
minced
1 cup heavy cream
1 cup chicken broth
2 tsp dried Italian herbs
(basil, oregano, thyme)
½ cup sun-dried tomatoes,
chopped
½ cup grated Romano cheese
Salt and pepper to taste
Instructions
Place the chicken breasts in the
bottom of the crockpot.
Sprinkle minced garlic over the
chicken.
In a bowl, mix heavy cream,
chicken broth, Italian herbs, sun-dried tomatoes, and Romano cheese.
Pour the sauce mixture over the
chicken, ensuring it's well-coated.
Cover and cook on low for 6 hours
or high for 3 hours until tender.
Serve hot over pasta or rice,
drizzled with extra sauce.
