I have to admit how
much I love this Tomato Mozzarella Caprese Salad. It’s my go to when I want a
light snack without all the fuss. Only problem is, I never have enough
Mozzarella Cheese balls in the fridge, so it becomes a treat when I have it in
the house. I highly recommend it to anyone who loves fresh tomatoes, Mozzarella
Cheese and fresh basil.
Ingredients
1 medium ripe vine tomatoes, sliced ¼ inch
thick
16 oz. pre-sliced fresh mozzarella, I use Belgioioso
1 bunch fresh basil, to go in between
¼ cup olive oil, extra virgin
¼ cup balsamic glaze, to taste you can use
red wine vinegar if you don’t have balsamic
½ tsp. salt, to taste
½ tsp. black pepper, freshly cracked
Instructions
Sliced the tomatoes into ¼" thick slices.
Wash the basil bunch and pick out all the leaves.
In a platter, start by layering the tomatoes, mozzarella
slices and tucking the basil leaves in between each.
Drizzle the olive oil, balsamic glaze, and season with some
salt and pepper and serve.
I serve this with garlic bread to make it a complete meal.
