This timeless recipe was handed down to me by my Aunt Greta, who received
it from her mother, my grandmother, and she brought her recipes with her from Ireland! Remember,
the key to perfect brownies is not overbaking—aim for that moist, fudgy
texture. While this brownie mix shines on its own, Aunt Greta used to spruce it
up by adding chopped walnuts or pecans, mini chocolate chips, and once she
added a handful of salty crushed pretzels. Surprisingly enough, those were
really good. You can either serve plain, frosted with chocolate icing, or heated
up with a scoop of vanilla Ice Cream to make it an elegant treat.
Ingredients
Brownie Mix
6 cups all-purpose flour
4 teaspoons baking powder
2 teaspoons salt
8 cups granulated sugar
1 cup unsweetened cocoa powder
2 cups vegetable shortening
Instructions
In a large bowl, sift together flour, baking powder, salt
& cocoa powder. Stir in sugar.
Add shortening and cut in with a pastry cutter until evenly
distributed.
Store sealed in a cool, dry place for up to 3 months.
To Bake Brownies
2 eggs
1 teaspoon vanilla extract
3 tablespoons of melted butter
½ cup add-ins as desired, optional
To Bake Brownies
Preheat oven to 350°F.
Combine 2 ½ cups brownie mix with the remaining ingredients.
Stir until smooth.
Pour into an 8×8 pan lined with parchment.
Bake 28-30 minutes or just until set. Cool completely.
Frost as desired and cut into squares.
