Bruschetta


Ingredients:

French Baguette Bread, sliced
5-7 Fresh Roma Tomatoes, diced
7-10 Fresh Basil leaves, diced
1 Scallion, diced
1/4 tablespoon of diced garlic
1 tablespoon of Olive Oil

Directions: 

Slice your bread into thin pieces, as shown in picture above, and place on a cookie sheet, then place either in a toaster oven or regular oven to lightly toast the pieces. Do not dry out the bread, let it get warm, but not fully toasted.  Meanwhile, in a mixing bowl, combine your diced tomato, basil, scallion, and garlic with olive oil. Make sure everything is coated with the olive oil. Once bread is lightly toasted, place each piece on your serving dish. Gently spoon out a little of the mixture onto the bread slowly. Presentation is everything when cooking, so take pride in your presentation and take your time.  This appetizer is not only light in weight, but also light in both calories and flare. Enjoy it! 

Note: If you cut your French Bread into slices as shown above, you should be able to get a minimum of 15-18 slices out of one long piece of bread. Use that calculations when determining how many French Baguettes to buy  for your party. Hate to have you run short. The above ingredients can be made into a small serving of 3 or a big batch for a large party.  It depends on you.
