Irish Soda Bread
The following recipe was handed down from my Grandmother to my Mother and to me. It's the recipe I've used since I was 10 years old when I first learned how to make it. Enjoy
Ingredienta:
4-1/2 cups flour
1 tablespoon sugar
1 teaspoon salt
1 teaspoon baking soda
4 tablespoons butter
1 cup raisins
1 large egg beaten well
1-3/4 buttermilk
Directions:
Preheat oven to 425F. blend together flour, sugar and baking soda in large mixing bowl. save 1/2 cup flour for later. You use the extra flour later to put on your counter so that's when you put the dough out on the counter to needed the extra flour you sprinkle on the counter so it doesn't stick and if it seems like it's too wet and just a little bit of flour as you need it until it forms a complete balls.
Blend in butter and add raisins then mix in buttermilk and egg and mix well.
lightly knead dough to form a mound. Work it just enough so dough just comes together. Do not over knead,
transfer dough mound to lightly greased baking sheet. cut an X into top of dough.
Bake for 35-45 minutes or until golden brown on top and the bottom sounds hollow when tapped.
let cool once removed from baking sheet. then serve warm with honey butter.
