Cole Slaw Dressing Recipe

 



There is nothing better than really good cole slaw as a side dish to a good grilled hamburger or pork barbeque sandwich. When I buy a head of cabbage I make sure that I have at least a few dishes in mind for the head, since I can't eat the entire head in one sitting. So I make a variety of dishes with it. There might be Hungarian Stuffed Cabbage Rolls, or maybe bubbles and squeak (Cabbage, onions, potato, and carrots sauteed together and served with roast beef) and of course Cole Slaw as a side to just about everything.  So here's how you make it. 

Ingredients: 

If you don't want to buy one single head of lettuce and cut it up, then buy the cole slaw package already cut up, but know ahead of time that all that cole slaw has to be eaten so plan your meals accordingly so there's no waste. 

Cole Slaw package or 1 head of Cabbage

1 large Carrot shredded 

1 Green Onion finely chopped

2/3 cups Mayo

1/2 tablespoon honey

2 teaspoons of brown sugar

1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons Vinegar

2 tablespoons of Extra Virgin Olive Oil 


Mix everything together in one bowl then pour over cole slaw and carrots and toss like a regular salad. Put in the fridge for 2 hours until dressing sets then taste it to ensure it is to your liking and if it passes your taste test, serve and enjoy.
