Beef Barley Soup

 


Beef Barley Soup 

Beef Barley Soup is similar to beef stew without the potatoes and instead you add barley. It’s chunks of beef, veggies and barley and makes a hearty meal perfect for lunch or dinner. Add in some fresh garlic bread or your favorite crackers and you’ve got one heck of a meal.

Ingredients:

½ Tablespoon of Oil (I use olive oil)

½ pound of beef cubes

½ small onion, diced

Handful of shredded carrots

1 rib cut up of celery

1 teaspoon minced garlic

½ teaspoon salt

½ teaspoon of dried thyme

½ teaspoon black pepper

2 ½ cups beef broth or bone broth

½ cup pearl barley rinsed

½ tablespoon of tomato paste

1 bay leaf

Directions:

In a large pot or Dutch oven heat oil and brown the meat over medium to high heat but monitored so as to not burn the meat. About 2 minutes each side, once cooked remove from heat.

Then add in your veggies, onions, carrots, celery and cook until the onions are translucent, about 3-4 minutes. Then add in your garlic, thyme, salt and pepper and cook for about a minute stir to blend all ingredients together. Then stir in your broth, barley and tomato paste along with your bay leaf. Bring to a boil over medium heat once your at a rolling boil, reduce heat to medium low heat and add the meat back in. Simmer for about 40 minutes until barley and veggies are tender. Stir occasionally. Once barley and veggies are tender and meat can be cut in half with a fork, the soup will be done. Serve hot with bread or crackers.
