Homemade Sauerkraut

Sauerkraut is one of those culinary delights that can’t be left off any German dish. This is awesome with Kielbasa, Bratwurst, Sausage, meatballs, and let’s not forget Corned Beef, and of course Hot Dogs. I love sauerkraut and have since I was a child. I can’t eat pork chops without sauerkraut, it just doesn’t seem right not to eat ribs or pork chops without kraut. Lets make some homemade Sauerkraut:

Ingredients:

Cabbage Shredded

Canning salt or sea salt

2 sweet onions,

2 tablespoons of caraway seeds (optional)

1 teaspoon of ground coriander

White Vinegar

Directions:

Quarter cabbage remove center core and then shred.

In a large bowl, combine cabbage and salt and let sit for about 10 minutes. After 10 minutes mix cabbage and salt and squeeze out any excess water. Then firmly pack cabbage into a fermenting crock or large glass container, be sure to remove any bubbles by using a chopstick and poke down into the contents to ensure there are no air pockets.

In a saucepan combine salt and vinegar together and heat until salt is completely dissolved. Allow the brine to cool enough that it doesn’t cook the cabbage when you pour it into the crock or container. Use a fermenting weight to push the cabbage down after you fill the container or crock with the brine. Be sure to always keep cabbage below the liquid line during the fermenting process. This process will take anywhere between 3-4 weeks. Check crock at least 3-4 times per week and skim off any scum that forms. The fermenting process is done when no more bubbles are coming to the surface. It might seem like a long time for something to ferment and the smell will change over this period, but once it’s done, you will always want to make your own Kraut because it tastes so good.  

Once done transfer kraut to storage containers and refrigerate for up to 3-5 months Enjoy!
