Spinach Artichoke Dip

 


Spinach Artichoke Dip 

This is a classic party dip, however, I love it as a snack due to its savory and creamy deliciousness. Absolutely love this dip and it's actually healthy for you since it has spinach, sour cream, mozzarella, and parmesan cheese in it. What more could you ask for a snack or dip? Let's make some dip, 

Ingredients

8 ounces of cream cheese at room temperature 

1/2 cup sour cream

1/4 cup mayonnaise

1 clove of garlic grated or 2 teaspoons of jarred garlic

10-ounce box of frozen spinach, thawed and drained, then squeezed dried and chopped

1 14-ounce jar of artichoke hearts, drained and chopped

1/2 cup shredded mozzarella cheese whole milk

3/4 cup of parmesan cheese

salt and pepper

Directions: 

Preheat oven to 350 degrees F. Spray a baking dish 1-quart size or two smaller baking dishes with nonstick cooking spray. 

Place spinach into a strainer to allow it to strain off all juices/water. once it's been drained remove it from the strainer and place it aside. Then drain the artichokes in the strainer until all the oil is gone. Remove and place aside too. Chop spinach into smaller pieces and do the same to the artichokes too. You can combine these two into the same dish. 

Place cream cheese, sour cream, mayonnaise, and garlic into a large bowl and combine until completely smooth consistency. Then add your spinach and artichokes along with mozzarella and parmesan cheese and mix well. Add salt and pepper then transfer mixture to baking dish and top with remaining parmesan cheese.  Bake for 25 minutes or until the top is golden brown and the cheese is bubbling. Serve with crackers or garlic bread if snacking. If serving for a party, be sure to serve with tortilla chips.
