Ireland has many traditional dishes that should be tried and tested and this is one of those amazing dishes that just hits the spot. This is just one outstanding dish that should be tried around St. Patrick's Day.
Ingredients:
8 slices of bacon chopped up into small pieces
2 lbs Pork Sausage cooked and cut into bite-sized pieces
2 lbs Smoke ham cut into bite-sized pieces.
3 carrots peeled and diced
2 garlic cloves
2 large potatoes diced
1 large onion diced
1 tablespoon thyme
1 tablespoon sea salt
1/2 teaspoon black pepper
1/2 cup chicken broth to cover
Directions:
Preheat oven to 350 degrees F
Place chopped bacon in a Dutch oven or oven-proof skillet and cook over medium heat until golden brown. About 5-7 minutes then using a slotted spoon transfer bacon onto a paper-towel-lined dish and set aside. Drain excess oil from the pan.
Add Sausage to pan and sear for about 3-4 minutes on all sides. When the sausage is a good color turn off the stove remove the skillet and remove the sausage from the pan. deglaze the pan with either chicken stock or a half can of Guinness if you can handle beer. I can't so I used chicken stock. Be sure to scrape the bottom as you add the liquid.
Now that you've deglazed the pan, add your onions to the bottom along with the garlic then season with sea salt and pepper, thyme, and parsley. Layer the sausage over the top and the remainder of the chicken stock. Then layer the potatoes, carrots, and bacon to the top of the sausage. Add the remaining seasoning to the Dutch Oven and cover then plan the pan into the preheated 350-degree pan for 1 hour and 15 minutes until potatoes are tender.
Carefully remove the pot from the oven. The pot and contents will be extremely hot, so please be careful. Serve with crusty bread and enjoy.
